PURPOSE: A freeze drying system is provided to promote drying efficiency of agricultural products and processed foodstuffs and to reduce load of a freezing system. CONSTITUTION: Hot and humid air of a drying chamber(23) passes a part(12a) of a rotary heat exchanger(12). The temperature of the air of the drying chamber falls to 30 to 40deg.C from 40 to 50deg.C while passing through the heat exchanger. The air is cooled and dehydrated via an evaporator(13). Thereafter, the dry and cool air is heated while passing through another part(12b) of the heat exchanger by a blower(16). Then, a portion of the air is discharged via an exhaust fan(21). The air is mixed with the external air flowing in through a suction fan(20), and then, supplied to a reheating heat exchanger via an air supply path(6) by passing through an air supply/discharge partition(15). According to the rotary heat exchanger operating ahead and behind the evaporator, temperature of the humid air passing through the evaporator decreases and load of a compressor of a freezing system is reduced. Therefore, structure of the freezing system is compacted.
