PURPOSE: Processes for preparing distilled spirits and medical wine are provided for excluding the greasy taste and flavor from the spirits or wine so that the components can have the fresh smell and taste controlled to be balanced to a high degree of quality. CONSTITUTION: A processes for preparing distilled spirits and medical wine comprise: impregnating the primary rice into water and sucrose-enriching, and mixing with Aspergillus to produce rice paste; adding water and yeast to the paste, culturing and producing the source of spirits; adding the secondary rice with non-enriched sucrose, water, liquified enzyme and carrying out fermentation to produce the source of spirits; and distilling the source of spirits. The taste and flavor of spirits and medicinal wine is fresh and shows high quality. Since the process does not require the sucrose-enriching step of the secondary rice, the cost for carrying out the step is reduced.
