摘要 PROBLEM TO BE SOLVED: To provide a method for forming a uniform and thin bottom wall along the shape of a mold even when the surface is not smoothed by vibration due to a high viscosity of a filling or in the case of the filling having physical properties incapable of applying the vibration thereto in the production of a mold formed oily and fatty confectionery. SOLUTION: A space for forming a bottom wall is prepared by filling an oily and fatty confectionery dough or a filling in a mold and then scraping off and removing the excessive oily and fatty confectionery dough or the filling with a scraping off plate reversibly bent by a pushing force so as to penetrate the tip of a part without being exposed to the mold even into the interior of the mold.
