The procedure consists of boring a hole (8) in the oyster shell (3) close to its adductor muscle (6) and then causing the shell to open partially, to permit the introduction of a tool blade (12) through the hole before the shell closes. The shell is opened e.g. by immersing the oyster for about six hours in a solution of 40 per cent sweet water and 60 per cent sea water, with the addition of 5 per cent by weight of magnesium chloride. After inserting the tool (10), it is left in the shell until the consumer is ready to eat it, when the adductor muscle is cut through by rotating the blade.
