PROBLEM TO BE SOLVED: To provide noodles giving a tongue feeling specific to handmade noodles and its producing method by making noodle lines obtained by a factory production have an uneven cross section such as that of a handmade noodle. SOLUTION: The objective noodle lines 15 having uneven cross section shape are obtained by feeding a noodle belt between a pair of rolling rolls in a rolling machine having unevenness 11 on external peripheries of one side roll 3a or both sides of the rolls 3a and 3b of a pair of the rolling rolls and pressing, then cutting the resultant noodle belt wherein the unevenness 11 are formed on one face or both faces with a kitchen knife or a cutter having many blades. |
