The invention concerns a parenchyma cellulose at least partially microfibrillated, consisting of cellulose I, characterised in that it is substituted with carboxyalkyl groups in acid form or in the form of carboxylate with degree of substitution not more than 0.7, more precisely ranging from 0.1 to 0.7. Said cellulose can easily be re-suspended while at the same time providing stable suspensions after having been dehydrated. It substantially preserves its rheological properties one re-suspended after dehydration.
