Method and apparatus for drying fat or oil containing substances

A method is described for the continuous drying of fat or oil containing substances, comprising the steps of: allowing the substance to be dried to enter a first chamber where it is subjected to a rapid heating process in hot fat or oil, and transferring said substance to be dried to a second chamber for further drying and sedimentation of the substance in hot fat or oil. A compact apparatus is also for the continuous hydrostatic drying of fat or oil containing substances in a fat bath having at least a first and a second vertical or slightly inclined chamber (31, 32), the first chamber (31) including an inlet for the substance (25) to be dried, said first chamber (31) including hot fat or oil for rapid heating of said substance (25), and said second chamber (32) including hot fat or oil allowing further drying and sedimentation of the substance to be dried.
