The invention concerns a method for opening oysters consisting in: piercing the oyster shell to produce an orifice on the muscle retaining its cover, or in the zone close to said muscle; then injecting into the oyster, through the resulting orifice, a fluid under pressure for cutting out said muscle and/or detaching it from the shell. In a particular embodiment, the appliance for implementing the method comprises a system for positioning (14) the oyster (12) relative to a drill (4) to ensure the production of the orifice through the oyster shell, on the muscle or in the muscle zone, and means (24, 25) for injecting fluid under pressure inside the oyster via said drill (4), for cutting out and/or detaching said muscle from the shell. In another embodiment, after piercing the oyster shell on the muscle or in the zone close to the muscle, the oyster is placed in a oven under steam pressure, in pressure and temperature conditions adapted for the steam under pressure to act directly on the oyster muscle for detaching it.
