A granular cooking composition is new and comprises 8 - 50 wt.% visual material, 15 - 35 wt.% binding agent and 20 - 70 wt.% pleasant tasting flavours and is then compressed producing the final product. Also claimed are: (1) the preparation of the cooking composition comprising mixing the visual material with the binding agent and the flavourings, crumbling the mixture then chilling or drying the mixture followed by a final crumbling stage either successively or simultaneously; and (2) the apparatus to carry out the preparation of the cooking composition comprising a mixing device for all the ingredients, a crumbling device and a chilling or drying device.
