PROBLEM TO BE SOLVED: To provide a simple and efficient method for depositing all or a sufficient amount of α-aspartyl-L-phenylalanine methyl ester (APM) onto a supporting substance in an amount apparently exceeding 10 wt.% and converting to a composition having good solubility and handleability. SOLUTION: In this method for producing aspartame on a supporting substance, (1) α-L-aspartyl-L-phenylalanine methyl ester (APM) comprises particles mainly having 100 μm size and produced in spontaneous aggregation state and/or particles mainly having <50 μm size and has bulk density having <=350 kg/m<3> density and is obtained by crystallizing and granulating α-L-aspartyl-L- phenylalaninemethyl ester from a water-soluble medium under forced flow and mechanically making produced particles small so as to have function having proper property and (2) α-L-aspartyl-L-phenylalanine methyl ester is brought into contact with an edible supporting substance in a short time under mild mixed conditions. |
