PROBLEM TO BE SOLVED: To obtain a frozen core material for rolled SUSHI excellent in keeping quality, palate feeling and machinability, appearance of an obtained rolled SUSHI by filling.sealing a mixture of granular foodstuff, flaky foodstuff, pasty foodstuff and a thickening agent into an edible casing film, and sterilizing by heat. SOLUTION: The mixture of one or more kind of the granular foodstuff (e.g.; disassembled cod roe, smelt roe, salmon roe, etc.), the flaky foodstuff (e.g.; foodstuff obtained by processing crab, salmon, tuna, etc., into flakes), the pasty foodstuff (e.g.; fish meat collected from neighborhood of spine of fishes such as tuna, etc., ume apricot pulp, etc.), and the thickening agent is charged into the edible casing film, sealed and sterilized by heat. The thickener are preferably one or more kind of starch and their pregelatinized compound, casein and their salts, and their preferred amount is 2-15% based on the finished weight of the fillers of the casing. |
