PROBLEM TO BE SOLVED: To obtain the subject food product that has improved coagulation stability and can be refrigerated by preparing a viscous solution of seaweeds as a starting material under specific conditions and coagulating the viscous solution in a prescribed form with a coagulant. SOLUTION: Seaweeds as a raw material is charged in an airtight vacuum tank 10, crushed with a high-speed rotary cutter 14, adjusted in pH to 4-6 with vinegar. Then, the content is stirred with the blade 17 and a chelating agent is suitably added and dissolved. During this dissolving process, a suction pump 21 is operated throughout or partially to keep the pressure lower than 0.5 atmospheric pressure. The resultant viscous solution is coagulated in a prescribed shape with a coagulant. An alkali metal organic or inorganic acid salt such as sodium citrate or sodium carbonate is used as a chelating agent. |
