PROBLEM TO BE SOLVED: To obtain a flour with decreased allergen content so that the flour can be used as a food for a patient having allergy for wheat, by specifying the particle size of wheat chips used as the source material to be subjected to allergen reduction treatment. SOLUTION: Wheat chips to be used as the source material for allergen reduction treatment are controlled to such a range of particle size that the particles can pass through a 16-mesh (JIS) sieve but does not pass through a 70-mesh (JIS) sieve. The allergen reduction treatment is carried out, for example, by treating wheat chips with a protein decomposing enzyme, salt water, dispersion liquid of lactic acid bacteria in sugar soln. or by dipping in ethanol or alkali soln. By this method, viscosity is decreased due to coupling with gluten and wheat starch or between glutens. |
