PROBLEM TO BE SOLVED: To obtain a compound having horseradish flavor, capable of sufficiently feeling flavor of ground horseradish, excellent in keeping quality and useful for foods having horseradish taste, etc., by including a first flavor ingredient such as α-pinene and 3-butenyl isothiocyanate. SOLUTION: This compound having horseradish flavor contains (A) one or more kinds of flavor components selected from a group comprising α-pinene, β-pinene, limonene, γ-terpinene, citral, cineole, linalool, citroneral, isocitral, sabinene, terpineolene, safrole and myrcene and (B) 3-butenyl isothiocyanate and further preferably contains (C) a compound of the formula RN=C=S (excluding the component B) such as n-butyl isothiocyanate or allyl isothiocyanate. Furthermore, a ratio of the components A/B is preferably 10<-7> to 100/1 and the component A is preferably blended in an amount of 10<-7> to 0.1wt.%. |
