A composition suitable for use as a fining agent is characterised in that it comprises pectin having a molecular size range indicated by a limiting viscosity number less than 0.5 and preferably from 0.005 to 0.2. This pectin may be derived from apple, citrus, beet, carrot, potato or sunflower and converted to the required form by modification with pectinase under conditions suitable to attain the required limiting viscosity number. The composition is particularly suitable for fining beers or lagers.
