PROBLEM TO BE SOLVED: To prepare noodles containing Aphanothece sacrum Okada by compounding wheat flour with a proper amount of the natural Aphanothece sacrum Okada extremely high in the contents of calcium and iron whose intakes are now little in the eating habits of Japanese people, adding water, common salt and, if necessary, further brine, kneading the mixture and subsequently processing the kneaded product into the noodles, such as raw noodles, boiled noodles, steamed noodles or dry noodles, good in color, taste and texture by conventional methods. SOLUTION: Wheat flour is compounded with raw Aphanothece sacrum Okada or its dry powder in an amount of 1-60wt.%, preferably 5-30wt.%, based on the wheat in the raw state or in an amount of 0.01-50wt.%, preferably 0.1-1.0wt.%, in the dry state. |
