Complex of cyclodextrin or derivative and 3-deoxy-D-glycero-pentulose

A complex comprising cyclodextrin (or one or more of its derivatives) and 3-deoxy-D-glyceropentulose (3-DGP) is claimed. Also claimed are (1) a method for preparing the complex by dissolving the cyclodextrin and 3-DGP in water under suitable conditions to form a complex, and removing the complex; (2) isolation of 3-DGP from aqueous solution by contacting with the cyclodextrin under suitable conditions to form a complex, removing the complex from solution and releasing 3-DGP from the complex.
