摘要 PROBLEM TO BE SOLVED: To provide a method, enabling the forming of a material into a desired shape in a state where the material does not completely gel before a heat treatment, and subsequent gelling by various heating method such as dipping in hot water, frying in oil and boiling with steam, and capable of producing a konjak having new palatability and taste which are not found in a conventional konjak. SOLUTION: An alkali is added to a mixture of blour of tuberous roots of devil's tongue and/or a partial hydrolyze if glucomannan with water, and the resultant mixture is stirred under heating to make the material of a semi-gel state. Subsequently, the material is formed into a desired shape and subjected to a heat treatment to obtain the objective konjak. The stirring under heating is preferably carried out at 40-85 deg.C for 10-60min. Further, as the heat treatment, a method such as dipping hot water, flrying in oil or boiling with steam can be used. Furthermore, soybean milk, cow's milk, whey, yogurt, etc., may be added as an auxiliary material.
