PROBLEM TO BE SOLVED: To obtain a sweetener-containing food containing a sweetener and a specific bitter substance, free from heavy sweet taste after taking in spite of the use of a sweetener a s a substitute for surface and giving refreshing aftertaste. SOLUTION: This food contains (A) a sweetener (preferably sorbitol, glycerol, d-xylose, etc.) and (B) a bitter substrate selected from 8-acetylated sucrose, quinine hydrochloride, quinine sulfate, caffeine and brucine. The amount of the component B is preferably 1×10<-3> to 0.1wt.% in the objective food and 0.0001-0.1 pts.wt. based on 100 pts.wt. of the component A. The food is e.g. hard candy, soft candy and chocolate. |
