PURPOSE:To provide a method for producing dried beef, capable of cutting at ordinary temperature in various shapes, exhibiting beautiful color and capable of maximally setting off characteristics of beef taste. CONSTITUTION:The method for producing dried beef is to carry out washing treatment of a part of lean meat after removing unnecessary part with water having prescribed temperature, carry out shaping treatment, inject a seasoning solution into the interior of the lean meat after shaping treatment, immerse the meat into a vessel for seasoning solution controlled at a definite temperature, age the meat and carry out heat-drying treatment of the meat, steam treatment for re-softening the surface part of hardened lean meat, smoking treatment for smoking the lean meat and carry out re-drying treatment for re-heating the lean meat after smoking until the water content and water content activity of the center part of the lean meat after smoking becomes <=23% and <=0.86, respectively and carry out boiling treatment, re-drying treatment and cooling treatment. |
