PROBLEM TO BE SOLVED: To obtain an oil and fat composition, comprising an unsaturated di-fatty acid ester of glycerol therein, sufficiently satisfying functions of oil and fat in a puff shell dough and capable of stably providing a product good in the volume and state of the inner phase of the puff shell. SOLUTION: This oil and fat composition for a puff shell contains >=0.2wt.% unsaturated fatty acid ester of diglycerol obtained by purifying and concentrating an ester prepared by carrying out the esterifying reaction of the diglycerol with an unsaturated fatty acid, transesterification of the diglycerol with a triglyceride, etc., and raising the monoester purity to >=50% and/or >=0.5wt.% sodium caseinate. |
