PURPOSE: To obtain the subject food with coat material, having good restoring property and not causing release of coat and elimination of bread crumb by applying the inner material with a soybean protein-containing solution and freezing and drying the material. CONSTITUTION: The inner material of a processed food such as vegetable, fishes and shellfishes, fish meat, meat, meat-processed food, meat dumpling, roasted pork or croquette is coated with a soybean protein containing solution which is an emulsion obtained by homogenizing a soybean protein, oil and fat and water and bread crumb and then, the resultant food is lyophilized. |
