PURPOSE: To prevent secondary pollution in Camembert cheese producing process. CONSTITUTION: This method for producing Camembert cheese comprises immersing curd mass taken out from a mold into aε-poly-L-lysine-containing solution or kneading the lysine into curd mass in production of Camembert cheese. Thereby, the numbers of Listeria and Escherichia in the treated product are remarkably reduced in comparison with that in a control product, but growth of fungi is not hindered in the treated product.
