Process and apparatus for producing aerated frozen products

Prodn. of frozen, aerated prod. comprises mixing, aerating, freezing and cooling the ingredients to -8 deg.C or lower. All these steps take place in a single device consisting of two parallel endless screws turning in the same direction and meshing together, situated in a duct provided with aeration and refrigeration. Also claimed are: (a) a frozen aerated prod. contg. ice crystals with an average dia. of 10-30 microns and opt. fat globules with an average dia. of 8-20 microns; and (b) appts. for producing the frozen prod. comprising two identical endless screws (1, 2), mounted parallel in a duct and intermeshing with each other with both screws turning in same direction to move product along from the inlet (4) to outlet extruder (6).
