PURPOSE:To provide a process for producing an oligosaccharide without necessitating particular steps such as the removal of beta-glucosidase, enabling direct application of a commercially available inexpensive beta-glucan hydrolase to the production process to enable the simplification of the production apparatus. CONSTITUTION:This process for the production of an oligosaccharide comprises the enzymatic hydrolysis of beta-glucan by adding gluconic acid or gluconolactone in addition to the beta-glucan hydrolase to the reaction liquid. As an alternative, an oligosaccharide is produced by adding glucose oxidase in addition to the beta-glucan hydrolase to the reaction liquid in the enzymatic hydrolysis of beta-glucan. |
