摘要 PURPOSE:To obtain just cooked rice composed of white rice, mixed rice or rice on which various kinds of food material is subjected to topping within extremely short time in desired time by dividing heating of cooked rice into two and completely cooking rice in the latter heating. CONSTITUTION:This two stage cooking method for highly water-absorbing rice and/or extra-high water-absorbing rice comprises cooking highly water- absorbing rice and/or extra-high water-absorbing rice or rice mixed with ingredient materials or rice on which other food material is subjected to topping in a cooking ratio of nearly 20-80% by electronic oven or steam, once interrupting heating, storing the rice and completely cooking the rice when it is required.
