A knife (10) for a food slicing apparatus in which a knife blade (12) is integral with a knife blade holder (14) such that the integral knife blade and holder may be easily attached to and removed from a cutting shoe (26) on the slicing apparatus. The knife blade holder (14) may be molded from a plastic material. A handle (16) extends outwardly from the knife blade holder (14) beyond the end of the knife blade (12c), which is integrally formed with the knife blade holder (14) by molding the blade (12) into the plastic knife blade holder (14). An elongated groove (20) is defined by the holder (14) extending between opposite sides (14a, 14b) of the holder (14), which groove (20) engages an attaching member (30). The groove and attaching member comprising male and female dovetail members to facilitate the mounting of the knife (10) on the cutting shoe (26) by merely sliding the knife (10) onto the cutting shoe (26).
