AMINOPEPTIDASE AND ITS PRODUCTION

PURPOSE:To obtain an alanine amino peptidase having high substrate specificity, and to provide a method for its mass production at low cost. CONSTITUTION:The objective enzyme is an alanine aminopeptidase found from a new strain belonging to Aeromonas and having the following characteristics: (1) having aminopeptidase activity; (2) optimal pH of ca.6.5; (3) stable pH range of 7.0-10.0 when treated at 4 deg.C for 5hr; (4) optimal temperature of ca.45 deg.C; (5) stable up to 40 deg.C when held at pH 7 for 10min; (6) having high specificity to L-alanine residue; and (7) molecular weight of ca.86kd determined by SDS- polyacrylamide gel electrophoresis,(existing in the form of hexamer). The alanine aminopeptidase is obtained in large quantities at low cost by culturing this strain.
