PURPOSE:To provide a mild table miso containing vitamins A and C, reduced in salt, useful also as a health food, and stressed in the characteristic flavor and sharp taste of the green pepper of sharp taste species. CONSTITUTION:Only the green pepper of sharp taste species is used as the vegetable raw material of the table miso (fermented and salted soybean paste) to improve the preservability of the table miso without using salt. Malted rice or malted wheat is used as a malt. At least a seasoning selected from soy, sweet sake, and extra pure sugar, and at least a delicious ingredient extract selected from a fish extract, a shellfish extract, a tangle extract, a bonito extract, and a shiitake mushroom extract are used as the seasonings. The green pepper, the malted rice, the seasonings, and the delicious ingredient extract are compounded in a weight ratio of 26-40: 26-40: 13-20: 13-20, respectively. |
