PURPOSE:To obtain an edible cellulose in high yield, useful for e.g. retaining the viscosity of cosmetics or coatings, by culturing cellulose-producible acetic bacteria in an invertase-added medium containing sucrose as a carbon source. CONSTITUTION:Microbes belonging to Acetobacter and having ability to produce cellulosic substances are cultured in a medium containing sucrose as a carbon source and an invertase in a concentication of 0.5-2 (pref. 1-1.5) units per g of the sucrose. The cellulose (cellulosic substance) produced and accumulated in the medium is then taken and, as necessary, subjected to removing treatment for impurities by e.g. washing with water. |
