The store room attached to a bakery is used to freeze, thaw and ferment baked goods and can maintain temperatures of between -30 deg.C and + 40 deg.C. Refrigeration equipment containing a thermodynamic heat pump is used for cooling, and warm air from the bakery is fed into the store room if temperatures are required. to be raised from about -30 deg.C to about +18 deg.C. The thermodynamic heat pump contained in the refrigeration equipment, together with warm air form the bakery, is also used to raise the store room temperature above +18 deg.C. The bakery air is fed through a filtering device in each case before being used in direct contact with foodstuffs in the store room.
