PURPOSE:To produce methyl glucoside of reduced discoloration using transglucosidase as a catalyst to effect the reaction of glucose with methyl alcohol at 65 deg.C or lower efficiently and economically. CONSTITUTION:In the reaction of glucose with methanol, transglucosidase is used as a catalyst.
