<p>PURPOSE:To enable efficient production of Japanese rice wine (SAKE) of high quality with improved feed stock utilization by estimating the alcohol formation rate from the measurement of carbon dioxide formation rate in the fermentation tank and controlling the alcohol formation rate so that the actual rate may coincide with the previously set rate. CONSTITUTION:The carbon dioxide formation rate in the fermentation tank is measured by means of a gas flow meter or a gas current meter connected to the tank and the value is used to know the alcohol fermentation rate by comparing it with the previously measured relationship between the gas formation and the alcohol formation. The deviation of the value from the set one is calculated and the temperature is controlled so that the actual alcohol formation rate may coincide with the set value to produce the objective SAKE.</p> |
