PURPOSE:To readily, efficiently and hygienically produce TOFU having flavor of cotton-strained TOFU by bittern of a salt field, mineral-containing good taste characteristics and soft and smooth physical properties of packed silk- strained TOFU by glucono-delta-lactone by using a semicontinuous cotton-strained TOFU device or a continuous packing type device. CONSTITUTION:Bittern by an ion exchange membrane method is reacted with one or more sulfates of an alkali metal and/or an alkaline earth metal sulfates except Ca to remove calcium. The prepared improved bittern and/or gypsum dihydrate is used as a coagulant for TOFU. Bittern from which Ca ion of CaCl2, an unfavorable compound as bittern for TOFU, is removed is capable of producing TOFU having soft and smooth touch to the palate, excellent flavor and taste. Gypsum dihydrate obtained by calcium removal treatment is capable of producing TOFU having characteristic physical properties, flavor and taste. |
