PURPOSE:To provide the highly healthy miso [salty fermented soybean (rice) paste] permitting to reduce the salt, having good preservability and high productivity, and excellent in its color, smell, taste and nutritive value. CONSTITUTION:The miso comprises malted rice, malted wheat, a relatively small amount of salt, and a fermented bean-like material obtained by inoculating the softened products of roasted soybeans with Bacillus natto. |
