PURPOSE:To provide a new and delicious smoked pickled ume (pickled Japanese plum) produced by a smoking treatment or with a smoking solution and reduced in the content of salt without deteriorating its preservability. CONSTITUTION:The smoked pickled ume obtained by smoking a pickled ume or treating the ume with a smoking solution has a reduced salt content, good preservability, and a new taste. Namely, the pickled ume use is specially not selected, and the smoking treatment permits to utilize a conventional installation such as a smoking chamber in accordance with a known technique, and both a warm smoking treatment and a cold smoking treatment are possible. Known chips can be used as chips which are sources for the smoking treatment. |
