PURPOSE:To produce bean curd without using a coagulating agent, by adding an acidic electrolyte to soybean milk, pouring the mixture into a vessel and applying an electric current to the vessel. CONSTITUTION:An acidic electrolyte, such as oxalic acid, gluconic acid, citric acid, or acid calcium phosphate, is added to soybean milk 3. The mixture is poured into a vessel 2 provided with electrodes 1, 1'. A commercial alternating current is applied through slidac 4 to the vessel and the soybean milk is solidified to produce bean curd. |
