For use in the preservation of fresh food, a material comprises aluminium or an alloy thereof having voids or pores extending therethrough, whiskers mainly composed of aluminium oxide being in at least some of the pores or voids, and water being retained by the whiskers. The material may be used to form at least the base of a container or to line a refrigerator.
