PURPOSE:To obtain a novel food with crisp palate feeling as well as leaving a good aftertaste by sealing peeled bananas in a packaging bag followed by high-pressure treatment and then freezing the resultant bananas. CONSTITUTION:Peeled bananas are cut, as necessary, immersed in an organic acid solution (e.g. of ascorbic acid) and then sealed in a packaging bag. The bananas, together with the bag, are treated under a pressure of >=100kgf/cm<2> for pref. l-10min, and the resulting bananas are frozen at >=-18 deg.C, thus giving the objective food. |
