PURPOSE: To obtain a browning agent from a soluble tea solid content which is to be used when a food having a nonbaked dough crust such as a meat pie and fruit pie is to be baked by using microwaves. CONSTITUTION: A soluble tea solid in an aqueous soln. state obtd. by extraction of tea leaves with water or by reconstructing an instant powder leaf, or in an emulsion state, is applied on a dough crust. Or, a concentrated soln. of the soluble tea solid content to be applied on a dough crust can be prepared by adding a small amt. of hydrocolloid gum in the aqueous soln. |
