PURPOSE: To provide a production method of yolk with decreased cholesterin. CONSTITUTION: Yolk is diluted by adding water or a salt soln., and cholesterin and cholesterin ester in the diluted yolk is selectively complexed with β- cyclodextrin. The β-cyclodextrin which carroes cholesterin and/or cholesterin ester is separated from the diluted yolk, and the water added is again removed from the yolk. The residue of β-cyclodextrin remaining in the yolk is decomposed by an enzyme using α-amylase and/or CTGase and the β-cyclodextrin is treated with water and/or alcohol to recover from the β-cyclodextrin complex. If necessary, the recovered β-cyclodextrin is used again to complex cholesterin and cholesterin ester. |
