PURPOSE: To provide a production method of a dry and compressed food from a freeze-dried and/or dried vegetable and/or animal source material. CONSTITUTION: (a) A freeze-dried or dried vegetable or animal source material is weighed in the required amt. to obtain the objective finish product. (b) The starting material is wetted with a water/alcohol soln. or only alcohol and maintained at 20 to 95 deg.C for 1 to 10sec to obtain a desired plasticity. (c) The product is compressed under 2 to 100kg/cm<2> pressure at 20 to 90 deg.C for 1 to 10sec, and (d) the obtd. product is wrapped with a material having high barrier property.
