MANNOSE ISOMERASE AND PRODUCTION OF MANNOSE USING THE SAME

PURPOSE:To produce mannose from fructose at a low cost by using mannose isomerase. CONSTITUTION:A new heat-stable mannose isomerase produced by Pseudomonas sp. AM-9582 strain, a process for the preparation of the enzyme and a process for producing mannose by treating a fructose-containing liquid with the mannose isomerase or with immobilized Pseudomonas sp. AM-9582 strain cells and collecting the obtained mannose-containing liquid.
