PURPOSE:To preserve bamboo shoot without impairing taste by salting the bamboo shoot and then drying the salted bamboo shoot. CONSTITUTION:Collected bamboo shoot is sliced in proper size and the sliced bamboo shoot is packed in a vessel together with common salt and a lid is put thereon and weight is loaded on the lid and salting of bamboo shoot is carried out and the salted bamboo shoot is dehydrated and then dried. |
