PURPOSE:To obtain in a short period the title uniform cubic agar of good quality by decreasing the ice block stepwise while releasing the water in ice block- like cubic agar through alternately repeated thawing and refreezing followed by specific treatment and then drying. CONSTITUTION:When cubic agar is to be dried artificially, the ice block is decreased stepwise while releasing the water in the ice block-like cubic agar through alternately repeated thawing and refreezing. Thence, at a point when said ice block disappeared, low-temperature (<=20 deg.C), low-moisture (<=25% in relative humidity) air is aerated in a regulated manner to dry the cubic agar. Although the artificial drying of cubic agar has been considered extremely difficult, the present drying method enables the production of stable, high-quality cubic agar comparable to the natural agar all the year round independent of season, thus greatly contributing to improving the productivity. |
