PURPOSE:To provide the title low-caloric composition having a creaminess extremely close to the smoothness inherent in fine fat spherical particle aggregates, thus usable as a fat alternative, consisting mainly of an atomized product of an aqueous gel of gellan gum. CONSTITUTION:The objective composition consisting mainly of an atomized product of an aqueous gel of gellan gum. It is preferable that the particle size of said atomized product be <=5mu on average on a volume distribution basis. |
