PURPOSE:To provide a novel, low-caloric fatty oil alternative, resistant to hydrolysis by lipase, good in flavor and mouth feeling, also having function as a heating medium, containing triglyceride(s) constituted of specific branched fatty acid. CONSTITUTION:The objective fatty oil alternative containing at least one kind of triglyceride constituted of a branched fatty acid with 12-22C main chain and alkyl group introduced at 2- or 3-site (e.g. 2-methyl-palmitic acid, 2-ethyl- palmitic acid, 3-methyl-palmitic acid). |
