PURPOSE:To obtain a processed raw material capable of providing soy sauce with a high content of formed glutamic acid in a short brewing period without producing sediments by specifying moisture content, barrel temperature, pressure, shaft power energy and outlet material temperature and treating soybeans with a twin-screw extruder. CONSTITUTION:Soybeans are treated with a twin-screw extruder under conditions so as to provide 28-36% moisture content, 100-150 deg.C barrel temperature, 30-55atm pressure, 180-340kJ/kg shaft power energy and 170-185 deg.C and outlet material temperature to afford a processed raw material for soy sauce. The moisture content of the resultant raw material is then regulated and the raw material is subsequently mixed with heat wheat raw material, inoculated with a mold starter and subjected to preparation of KOJI (yeast) and brewing. Thereby, high-quality mellow soy sauce having strong tastiness can be produced in a short brewing period without deteriorating the dissolving and utilizing ratio of nitrogen and the amount of soy sauce cake can be reduced. |
