PURPOSE: To prevent jelly granules from melting in a heating and pasteurizing process by compounding a specified proportion of a specified component such as sodium phosphate into tip of filger size or granula jelly comprising a juice obtd. by boiling Mesona procumbens when the jelly and a sugar liquid are canned. CONSTITUTION: When tip of finger size or granular jelly prepared from a juice obtd. by boiling Mesona procumbens is mixed with a sugar liquid and canned, 5 to 15wt.% sodium citrate, 30 to 50wt.% calcium lactate, 20 to 30wt.% polydextrin, 5wt.% of inosine monophosphate and guanosine monophosphate are added and compounded into the boiled juice and/or sugar liquid. Then the mixture is deaerated and pasteurized by heating to obtain a canned food. |
