The invention relates to a crystalline lactitol monohydrate having the lattice cell constants a = 7.815 +- 0.008 , b = 12.682 +- 0.008 and c = 15.927 +- 0.008 , and a melting range between 90 and 105degreeC and a water content of between 4.85 and 5.15%, together with a process for preparing the crystalline lactitol monohydrate by evaporating an aqueous lactitol solution down to a concentration of between 75 and 88% by weight, cooling the resulting mixture to a temperature in the range between 30 and 75degreeC, then separating the lactitol monohydrate crystals from the mother liquor and, after that, drying with air at a temperature of less than 120degreeC and at a relative humidity of between 0 and 40% for a time of less than 24 hours. The invention also relates to the use of the crystalline lactitol monohydrate as a bulk sweetener for wholly or partially replacing sucrose in dietary products, sweets, bakery products, grain and flakes, desserts, preserves, drinks, chocolate, chewing gum and ice cream, and in pharmaceutical and cosmetic products, such as toothpaste, and special sweeteners reminiscent of sucrose and principally consisting of the said crystalline lactitol monohydrate. |
